The days are getting warmer and let’s be honest: I definitely don’t feel like cooking once it is warm out. The warmer the weather, the bigger the challenge to prepare a meal. That is the biggest reason for eating a lot of salads during the summer (and I love the taste). It is refreshing and goes super fast. Today I am sharing an easy goat cheese salad recipe.
Ingredients
- Corn salad (a kind of lettuce)
- Cucumber
- Sun dried tomatoes
- Tomato
- Goad cheese
For the dressing:
- Olive oil
- Balsamic vinegar
- Honey
How to prepare:
Mix the olive oil, balsamic vinegar and honey together in a bowl. In terms of ratio, I like to use two spoons of olive oil and balsamic and one spoon of honey. You can add a bit more of each ingredient if you like.
Mix the dressing with the lettuce and put it on your plate. ‘Dress up’ the salad with all the other ingredients.
It is possible to eat the goat cheese cold, but I prefer to warm it up for a bit in a baking pan. Make sure the cheese doesn’t melt too much because it makes it more complicated to serve your salad.
Advice: serve the salad with some fresh bread and salty butter to finish up your meal.
